REZEPT: schneller glutenfreier Apfelkuchen vom Blech


Letztes Jahr waren wir das erste Mal mit unserem Sohnemann auf einer Apfelernte. Der fand das so mega die Äpfel direkt vom Baum zu pflücken, dass wir gefühlt mit 20kg Äpfeln nach Hause sind. Ich durfte mir dann überlegen was ich mit einem Jahresvorrat an Äpfeln anstellen soll. 
Auf einen aufwändigen Apfelkuchen mit Hefeteig usw. hatte ich keine Lust also hab ich es mit einem schnellen Apfelkuchen vom Blech probiert. Den Teig dazu habe ich ähnlich gemacht wie den schnellen Zwetschgenkuchen vom Blech den ich schon mal vorgestellt habe. 
Auch mit Apfel hat mich das Rezept so überzeugt, dass ich das in Zukunft öfters machen werde da der Kuchen super saftig geworden ist und ein herrlicher Apfelkuchen geworden ist - ohne den doch immer etwas zeitintensiven klassischen Hefeteig. 

Rezept für schnellen, glutenfreien Zwetschgenkuchen vom Blech

ZUTATEN 
1kg Äpfel 
200g Butter
150g Zucker 
1 Päckchen Vanillezucker 
15g Backpulver 
5 Eier 
Prise Salz
5-8 EL Milch 

ZUBEREITUNG
Zunächst die Äpfel schälen, entkernen und vierteln. Für den Teig die Butter, den Vanillezucker und Zucker cremig rühren. Die Eier einzeln unterrühren. In einer separaten Schüssel das Mehl mit dem Backpulver und Salz vermischen und in das Butter-Zuckermischung einrühren. Zum Schluss die Milch hinzugeben bis der Teig cremig aber etwas fest ist. 
Ein großes Backblech mit Backpapier auslegen und den Teig reingeben und glatt streichen. Die Apfelscheiben in Reihen in den Teig drücken
Im Ofen auf 180°C (Umluft: 160°C) für ca. 35-40 Minuten backen. 
Den Kuchen auskühlen lassen und erst dann mit etwas Puderzucker bestäuben.
